Bonefish Grill specializes in market fresh fish and seafood cooked to perfection over a wood-burning grill. But leading up to the moment the fish hits the grill there's the story of the passionate commitment that drives us to search the fisheries of the world to discover the finest fish and seafood, at the peak of its natural flavor and quality, and to bring it home to our customers.

This is an ongoing series of dispatches from that story.

My journey to the Mediterranean took me to places where fish arrive fresh from the sea each morning to meet recipes as ancient as the seaside villages they come from.

Traditions run deep here, and the more I explored it was surprising to discover that some of my favorite catches weren't fish at all.

I discovered rich, briny Kalamata Olives that come together with spinach, feta cheese and Spanish olive oils to create classic flavors that showcase why this region is one of my favorites.

A glass of the local wines always completed the experience.
