First Stop: Caribbean

Gone fishin' to Grenada in search of the freshest snapper, pompano and mahi mahi (Dorado, as the locals call it). By day we cross the jungle, by night we taste the rum. This is a full days work.

Our local guide Fire has told us about a fish market in Grenville, and a nutmeg factory on the way. We're here at a good time, the fish are biting. That means we'll probably be returning in a heavier plane. If not, there's always Belize.

Fresh Blackberry Rum Runner
The world's oldest rum, Mount Gay Eclipse, muddled with fresh blackberries and a splash of the Caribbean.

"Walkerswood" Shrimp Chanchito
Grilled and topped with Gulf Shrimp mushrooms and sun-dried tomatoes in a spicy "Walkerswood" sauce.

Jamaican Curried Mahi Mahi (Dorado)
Pan seared with a mild curry coconut sauce.

Imperial Mahi Mahi (Dorado)
Pan-seared, then baked and stuffed with Shrimp, Scallops, and Crab meat. A royal delicacy.

Macadamia Nut Dusted Chanchito
Grilled and topped with macadamia nuts and a pineapple rum sauce.
